Ingredients

  • 1 1/3 cups flour
  • 1/3 cup sugar
  • 1 stick butter or margarine
  • 1 egg yolk

Filling:

  • 2lb. cherries (yellow)
  • 2 eggs
  • 1/3 cup sugar
  • 1 teaspoon lemon juice
  • 8 oz. yogurt (plain)

Streusel:

  • 1/2 cup quick oats
  • 1/4 cup flour
  • 3 tablespoons butter or margarine
  • 1/4 cup sugar
Cake:
Place flour on counter top and sprinkle sugar over it. Make a well, drop in yolk and cut butter or margarine in slices over it. Knead to smooth dough.
Wrap in plastic wrap and refrigerate for 20 minutes. Roll out 3/4 of the dough over the bottom of a (10"X3") springform pan. Prick with a
fork all over the dough and bake in a preheated oven at 400 degrees for 10 minutes. Cool cake. With the rest of the dough form a 1" border around the baked cake.

Filling:

Wash and pit cherries and drain. Separate eggs. Beat egg whites until stiff. Beat yolks with yogurt, sugar and lemon juice. Fold egg whites into this mixture and spread over the cake. Place cherries on top.

Streusel:
Melt 1 tablespoon butter or margarine in a frying pan. Add oats and fry until lightly brown. Set aside to cool. Mix oats with the sugar, flour and
remaining 2 tablespoons butter or margarine into streusel. Sprinkle over the cherries and bake in a preheated oven at 370 degrees for 30 minutes.

Makes one 10" cake.
